- Since coming to UPR-RUM, Lynette Orellana has served on the Department of Agroenvironmental Science and the Program of Food Science and Technology for over twenty years and has written grant proposals to support graduated students. She currently teaches courses in Food Microbiology, Food Processing, Microbiology of Fruits and Vegetables and Food Toxicology. Orellana’s line of research includes: microbial studies and risk assessment for food products, new product development, shelf life studied and the use of edible film for food products.
